The Mediterranean Epicurean Masterclass

 

The Academy courses are available in-person and online and are sequenced in three sections from Basic to Intermediate to Superior Cuisine Certifications. We believe it is essential that good cooks build a strong foundation of understanding, discipline, and technique before advancing to more sophisticated and creative applications.

 

The joy of great cooking is best realized once a wide range of skills have been mastered together with a deep understanding of ingredients and history. 

 

 

We are a premier culinary academy focused on the rich diversity and history of Mediterranean cuisine. We offer in-person and online masterclasses for passionate part-time cooks to professional chefs and cooks from restaurants, catering, or hospitality businesses. We focus on applied learning that covers essential techniques, flavors, and dishes. 

 

Students will have the opportunity of choosing to pursue a basic, intermediate, or superior certificate and will learn from culinary experts with years of experience in the field. Through the academy, we also offer consultancy services to restaurants on how to improve their Mediterranean menus. 

 


Basic Cuisine Certificate

The starting point for Mediterranean Epicurean Masterclass participants, this certificate introduces fundamental Mediterranean cuisine techniques to newcomers in the field.

 

 

 


Basic Cuisine Certificate

The coursework for the Basic Cuisine Certificate will include the following applied learning sections. Participants are expected to learn the theory and techniques for each category before proceeding to the next Certificate Level. Our approach is to combine hands-on practical help with advice and assistance to enable at-home practice and perfection before advancing.

  • Learning classic and traditional Mediterranean gastronomy techniques
  • Understanding organization, hygiene, and safety in cuisine
  • Mastering the use of knives and introduction to professional techniques (cutting, different cuts)
  • Carrying out preliminary preparation of food (vegetables, fish, and meat)
  • Learning different cooking methods
  • Making stocks, sauces, jus, emulsions, and soups
  • Making basic doughs and restaurant desserts
  • Using Mediterranean cuisine terminology
  • Undertaking culinary theory classes (meat, dairy products)
  • Performing a sensorial analysis of a dish


Intermediate Cuisine Certificate

In this level, students are introduced to Mediterranean regional cuisines and put the techniques learned in the basic level into practice.

 

 

 


Intermediate Cuisine Certificate

The coursework for the Intermediate Cuisine Certificate will build on learnings from the Basic level and will include the following, more advanced sections. As with the Basic level, all participants are expected to learn the theory and master the techniques before proceeding. The Intermediate level will expose participants to some of the less familiar aspects of Mediterranean cooking and the vital role played by fresh, natural ingredients.

  • Learning Mediterranean regional cuisines
  • Making full use of assimilated techniques
  • Understanding the origin, quality, and sustainability of seasonal products and products from diverse regions
  • Maintaining organization, hygiene, and safety in cuisine
  • Performing advanced cutting and professional techniques
  • Undergoing an introduction to color, taste, and texture combinations
  • Learning contemporary cooking techniques
  • Awakening the senses to different flavors and mastering seasoning
  • Reproducing an identical dish
  • Learning to analyze food and wine pairing with a sommelier
  • Undertaking culinary theory classes (vegetables, seafood, and Mediterranean ingredients)
  • Beekeeping workshop
  • Seafood conference, taught by an industry professional
     


Superior Cuisine Certificate

Once students have mastered classic Mediterranean culinary techniques, they will be encouraged to unleash their creativity, both in terms of flavor and presentation, in the superior certificate course.

 

 

 


Superior Cuisine Certificate

With the foundations of Mediterranean cooking well established, the Superior Cuisine Certificate brings an opportunity for more advanced techniques, a deeper understanding of essential ingredients, and the chance to apply all learning to date with individual flair and creativity. The Superior Cuisine Certificate level brings the joy of Mediterranean cooking full circle and enables participants to explore their creative talents and passions.

  • Making classic dishes with an original and contemporary twist
  • Putting into practice organization, hygiene, and safety practices (HACCP)
  • Using and gaining knowledge of noble ingredients
  • Perfecting culinary techniques
  • Understanding time management in cuisine
  • Learning plate presentation
  • Mastering perfect cooking temperatures for meat and fish
  • Experimenting with cooking techniques (sous vide, low temperature)
  • Developing a creative and aesthetic style
  • Undertaking culinary theory classes (nutrition, recipe data sheets, and costing)
