Our Academy offers in-person and online courses in three phases of increasing detail and complexity that, together, develop a strong foundation of understanding, discipline, and technique before advancing to more sophisticated and creative applications.
We start with the fundamentals. From classical culinary techniques to the essentials of organization, hygiene, preparation, terminology, measurement, and core recipes, the Basic Cuisine Certificate is a solid foundation for any cook.
The Intermediate Cuisine Certificate advances each participant's knowledge with more sophisticated cooking techniques as well as classes to develop a deeper appreciation of tastes, pairings, and quality ingredient sourcing.
The Superior Cuisine Certificate is every participant's time to shine. We further develop the skills learned through the program to enable a creative spark to emerge through individual combinations of flavors and ingredients.
From seafood to meat to fresh vegetables, grains, herbs, and spices, traditional Mediterranean ingredients are the foundation of all regional recipes. The Mediterranean Epicurean Masterclass will enable participants to unleash their creativity to find and combine remarkable flavor profiles through their cooking.
